Bahir and Midnight Noir, the two new blends, on a red plinth

Introducingtwo New
Blends

The same Sidama harvest at two ends of the roast. Bahir stops at medium: blueberry, honey, bergamot. Midnight Noir keeps going until the fruit turns to molasses and smoke. Both fair trade, both in the cafés now.

The coffee

Roasted on Tuesdays.

Blends we have made for decades, single origins from the same farms every year, and a decaf that tastes like coffee.

The cafés

Six cafés in Chicago.

The original on Station Street, the bakery at Lakeview, the tasting room beside the roaster, and three newer counters: a patio café, the Galleria and a kiosk at Lakeshore Commons.

On the counter

The grilled cheese, since 1974.

It was on the first menu because it was the only thing the founders could cook. It has never come off, and it is still made on the grill behind the counter at every café with a kitchen.

How we roast

A drum roaster, a scale and a stopwatch.

Twelve kilos at a time on a roaster that was rebuilt twice before it came to us. Every batch is tasted the next morning before it is bagged.

  1. 01

    Buy

Fair trade is the floor. The same cooperatives every year, and more for the lots we love.

  2. 02

    Roast

Tuesdays, small batches, a profile for each coffee we have argued over for years.

  3. 03

    Rest

Four days before it ships. The roast date is on every bag.

Two new blends, one origin

Bahir and Midnight Noir are the same Ethiopian coffee at two ends of the roast. Here is why we did that.

How we buy coffee

Fair trade is the floor, not the ceiling. What the stamp means, and what we do on top of it.

Letters from the roastery

First to the new coffees.

A note when a new coffee lands or the cafés change the menu, and not much else.
