A light roast of a classic washed Yirgacheffe: floral, tea-like, with a lemon brightness that turns to peach as the cup cools.
We buy this lot from the same cooperative every year, and it is the first coffee we taste when the new crop lands.
How we brew it
Pour-over. 15 g to 250 g, 93°C, a slow bloom. No milk, please.
