Made withROKA Red Pepper SalsaYou’ll need
- 1 lb (450 g) flank or skirt steak
- 1 tbsp avocado oil
- 1 tsp salt and ½ tsp black pepper
- 1 tsp ground cumin
- 8 small corn or flour tortillas
- 1 jar ROKA Red Pepper Salsa
- ½ cup crumbled cotija
- A handful of cilantro
- 1 lime, in wedges
How it works
- Rub the steak with the oil, salt, pepper and cumin. Leave it for 15 minutes while the grill or a heavy pan heats up.
- Sear over high heat, 3 to 4 minutes a side for medium rare. Rest it for 5 minutes, then slice thinly across the grain.
- Warm the tortillas on the grill or in a dry pan until they char at the edges.
- Fill each one with steak, a big spoonful of red pepper salsa, cotija and cilantro. Lime on the side.
