You’ll need

  • 1 lb (450 g) flank or skirt steak
  • 1 tbsp avocado oil
  • 1 tsp salt and ½ tsp black pepper
  • 1 tsp ground cumin
  • 8 small corn or flour tortillas
  • 1 jar ROKA Red Pepper Salsa
  • ½ cup crumbled cotija
  • A handful of cilantro
  • 1 lime, in wedges

How it works

  1. Rub the steak with the oil, salt, pepper and cumin. Leave it for 15 minutes while the grill or a heavy pan heats up.
  2. Sear over high heat, 3 to 4 minutes a side for medium rare. Rest it for 5 minutes, then slice thinly across the grain.
  3. Warm the tortillas on the grill or in a dry pan until they char at the edges.
  4. Fill each one with steak, a big spoonful of red pepper salsa, cotija and cilantro. Lime on the side.
Three ROKA jars on a wooden table among tomatillos, red peppers, habaneros and a pumpkin: tomatillo salsa (mild), red pepper salsa (medium) and pumpkin habanero (hot), 250 g each

Where to buy

Find a jar near you.

Look for the black jars in the salsa aisle: green for mild, red for medium, orange for hot.
